Although traditional pesto is an oil-rich sauce, this home made recipe of pesto sauce consists of just required amount of olive oil, and yet is extremely delicious. It is rich in antioxidants due to the presence of basil, parsley, garlic, and walnuts. (You can use pine nuts, almonds or any other nuts that are bland in taste.) In addition to the antioxidant properties of walnuts, it also aids in brain function and healthy aging – thanks to the naturally packed essential vitamins, minerals, fiber, and omega-3 fatty acids.

Step by step method

  • Let's boil the pasta...

    1. Bring water to a rolling boil, add salt and oil to it.

  • 2. Add the pasta and cook then until they are soft. This will take about 7-8 minutes, depending on the shape of the pasta that you use.

  • Let's make pesto...

    3. Wash basil, parsley, garlic, and pat them dry.

  • 4. Add ingredients from step 3, along with walnuts and pepper corns, salt, and olive oil. Blend it to a smooth paste, by adding very little water only if required.

  • 5. Keep this pesto sauce aside.

  • Sauté the veggies...

    6. Heat a wok and add 1 tsp of oil and sauté onions until they turn translucent.

  • 7. Add broccoli, sweet peppers, and sauté until the veggies are well-cooked.

  • 8. Add the pesto sauce and some water (only if the sauce is thick and is sticking to the pan). Give it a quick stir.

  • 9. Add the boiled pasta and mix it up until the sauce is evenly coated.

  • 10. Garnish with some fresh parsley and shredded parmesan cheese and enjoy this truly delicious
